Poor Man's Toffee

I just made this. It's yummy and so easy, so I will share the recipe with you.

Poor Man's Toffee

1 sleeve saltines/soda crackers
1 cup butter
1 cup packed brown sugar
2 cups semi-sweet chocolate chips

1. Preheat oven to 375 degrees.





2. Arrange crackers in single layer on a 10x15 inch pan that has sides.









3. Boil the butter and brown sugar together for 3 minutes.









4. Pour mixture evenly over the crackers. Bake at 375 degrees for 7 minutes.









5. Remove from oven and immediately sprinkle chocolate chips over the hot mixture, spreading when melted. (Sorry, no photo for this last part!)










6. Let cool, cut into squares while still slightly warm, following crackers as a guide. Or break apart into pieces.

7. Try not to eat it all at once. :)

    Looks and sounds yummy! I have everything to make it except the crackers. But I'm emailing my hubby now to pick some up at the dollar store on the way home. hehehehehehehe.

    Sounds like a yummy thing to take on a car trip.

    Oh wait. Maybe not. ha. Not with MY kids. Unless I and the only one to eat them.

    Now, there's a thought.

  3. OK, mine are done and they flopped badly, all stuck to the bottom and a huge mess, what went wrong? As I was trying to chip them out of the pan i was trying to remember the recepie that I used, I think it called for graham crackers for the base and shaved almonds to top it off, but still, hmmmmm, I am going to have to cook the mess to get it soft enough to clean, i dont rememeber this happening before.
    It is still yummy though!

  4. Anna- That is so weird, it's never happened to me, but I use a non stick pan. You could spray the pan real good next time. Did you cook it for only 7 minutes? So weird. Mine slide right off.

  5. Oh- and the recipe for the graham cracker one actually does have different amounts of ingredients than the soda cracker one if I remember right. I have both recipes.

  6. Aaahhaa, I just realized something....I bet butter was the magic, (mental smack upside the head) I used margarine!

  7. Anna- yes! Butter is magic. You can't boil margarine and get caramel, because it is basically oil. Butter has the milk solids that make up the creamy caramel when you mix it with the brown sugar. Try it again, because it's so yummy.

  8. I just made this again on Sunday afternoon. It was at the meeting room, and the filling got way hotter. It was very chewy in the center, and skor bar crispy on the outsides. The one I made at home was more of a caramel consistency. Both ways are good!
