Cream Puffs

This is a favorite recipe of mine that I first made in 8th grade home economics class. I still have the recipe and thought I would share it here. There are lots of variations as to what to add or how to serve, so be creative!

Cream Puffs

1/2 cup water
1/4 cup butter
2 eggs
1/2 cup flour

Preheat oven to 425°.
Heat water and butter together in saucepan till rolling boil.









Stir in flour vigorously over low heat until mixture forms a ball, approx. 1 minute.









Remove pot from heat, beat in eggs.
Beat mixture continuously until smooth.(Add cheese now if adding, see #1 below.)








Drop by tsp fulls onto greased or nonstick baking sheet about 2" apart.
Bake 15-20 minutes.

Options:
1) stir 1/2 cup grated cheese into mixture once eggs are incorporated. I have also thought about adding salt, Italian seasoning and garlic powder earlier in the recipe, but I haven't tried it yet. I found they needed salt so I sprinkled salt on them before baking. Next time I will try mixing it in (unless I forget again.) You could also try seasonings.

2) slice open and fill with whipping cream or chocolate flavored whipping cream. Dust with powdered sugar or drizzle with chocolate.

Oh, they look delicious! I can remember my mother making these when I was little, but I've never tried to make them myself. Yours look mouth-watering! :)

I just love cream puffs. When I was growing up, this was one of the first recipes I had ever attempted in the kitchen. My mom had an old Amish cookbook that I had gotten the recipe out of and I was so proud of myself that I could make these :)
