Chocolate Meringue Cookies

Whipping the egg whites and tartar.


Slowly adding the sugar.


Folding in cocoa and chocolate.


Let the baking begin, maybe it would look nicer to pipe them onto the pan. :)


They're done.


Hmm, maybe I will have to try one.


Yummy crunchy gooey chewy goodness.


Chocolate Meringue Cookies

3 egg whites
1/8 teaspoon cream of tartar
1/2 teaspoon vanilla extract
2/3 cup white sugar
2 tablespoons unsweetened cocoa powder (or more to taste)
1/2 cup semisweet chocolate chips (I put mine in the blender and pulse)

Preheat oven to 300°.
Combine egg whites, cream of tartar and vanilla.
Beat until the whites form soft peaks.
Slowly add sugar beating until stiff peaks form and mixture becomes glossy.
Fold in cocoa and chocolate chips.
Drop mixture by teaspoonfuls on to a greased or parchment lined baking sheet. (I highly prefer the parchment paper.)

Bake for 40 minutes.

Optional: use the "forget method." Preheat oven to 400°. Place pans of cookies in oven. Turn off oven and leave 4-6 hours. Personally I like the 40 minute method better because I can eat them faster. :)
